What are Fajitas?
Fajitas is a popular Tex-Mex dish. The name is referring to a piece of skirt steak that is cut into thin strips. The original fajitas are made from beef. Chicken Fajitas is a popular variation of this dish. It’s most often served with flour tortillas, sauteed/grilled bell peppers and onions, and condiments such as guacamole or pico de gallo.
This recipe makes a spin on chicken Fajitas and packs them into cheesy tortilla wraps! Tortilla wraps are portable and perfect for a quick lunch or dinner!
Ingredients
Here’s what you need to make chicken Fajita wraps:
- Meat: I used boneless and skinless chicken breast but boneless and skinless chicken thighs can also be used (thighs need to be cooked a little bit longer). Chicken tenderloins are also a good option.
- Veggies: 2 colorful bell peppers and 1 red onion.
- Fajitas seasoning: I love my homemade Fajita seasoning, it’s so much better than store-bought and you only need 6 spices that you probably already have in your pantry to make it. It’s so flavorful, I’m using it all the time. Store-bought seasonings are usually stuffed with salt, corn starch, sugar, and other weird ingredients, instead of just spices. You can also use taco seasoning instead of fajita seasoning, these two seasonings are very similar. Store-bought seasoning will also work.
- Cheese – I used Swiss cheese but you can also use Jack cheese or Pepper Jack, mild cheddar will also work.
- Lime – it’s drizzled over the chicken after it has been baked to make it more flavorful.
- For the avocado sauce you will need: avocado (needs to be ripe!), sour cream (you can use Greek yogurt), lime juice, fresh cilantro, and garlic.
- Tortillas – large tortillas, burrito-sized.
How to make Chicken Fajita Wraps step by step
STEP 1: Make the sauce: add all the ingredients to a food processor and process until smooth. Season with salt and pepper to taste.
STEP 2: Prepare the ingredients
Cut the chicken into 1-inch (2.5cm) wide strips. Cut bell peppers into strips and onion in half then into slices.
In a medium bowl, stir together Fajita seasoning and 1 tablespoon of oil. Add the chicken, season with salt and pepper, and toss to coat.
STEP 3: Cook the chicken
In a large frying pan, heat the remaining 1 tablespoon of oil over medium-high heat. Add the chicken strips in an even layer and cook until browned. Turn over and cook until cooked through. Transfer to a plate and drizzle immediately with lime juice.
STEP 4: Cook the vegetables
Add the bell peppers and onion in an even layer to the pan. Cook for 2-3 minutes until lightly browned and softened but still crunchy. Season with salt and pepper and transfer to a plate.
STEP 5: Assemble the wraps
Place 4 slices of cheese on each wrap, top with the chicken and vegetables. Drizzle over the juices from the chicken mixed with lime juice (from the plate where the chicken was). Spoon about 1-2 tablespoons of avocado sauce on each wrap.
STEP 6: Wrap like a burrito. Place the wrap in a sandwich/panini press until warm. You could also reheat it in the oven or in a pan, just to melt the cheese.

Storage
When making these wraps, always make as much as you plan to eat and keep all the ingredients separate to prevent tortilla wraps from getting too soft /soggy. Assemble just before serving.
How to make them ahead: prepare and cook all your ingredients and keep in the fridge for up to 3 days. Assemble just before serving.
How to store avocado sauce: Cover the sauce immediately with plastic foil – it should touch the surface of the sauce to prevent browning. After a day or two, the surface of the sauce will brown a little but the flavor stays the same. Keep it for up to 3 days in the fridge.
