The Hugo cocktail is a delicious drink made with Prosecco, elderflower syrup, lime juice, and fresh mint leaves. It’s perfect for a hot summer day, it’s so easy to sip on and refreshing!

Here’s what you need to make this easy cocktail:
- Prosecco – Italian sparkling white wine. You can also use sparkling white wine from other countries such as French champagne or Spanish cava. This is an Italian drink, so the recipe calls for Prosecco. Sometimes this drink is also made with regular „non-sparkling” white wine, so if you’re not a fan of fizzy drinks or don’t have Prosecco on hand, just use regular white wine. Use a wine that is more on the sour side (dry or brut).
- Elderflower syrup – is a sweet syrup made by cooking elderflowers (pictured in the photo above) with sugar and water. The recipe calls for a non-alcoholic syrup, not an elderflower liqueur, such as St. Germain (although you could also add a small amount of this liqueur if you have it on hand to make your drink stronger, it is not traditionally added, though).
- Soda water / sparkling water – just to fill the glass. Again, if you prefer your drinks still, you can use still water.
- Mint – is always used in this drink and adds an amazing flavor that works perfectly with elderflower and lime flavors.
- Lime – lime juice adds a refreshing flavor to the drink and balances the sweetness of the syrup. Don’t omit it and use freshly squeezed juice.
- Ice cubes – to chill your drink.
How to make it step-by-step
Measure out elderflower syrup and lime juice and add them to a white wine glass. Add mint leaves.
Muddle the leaves slightly (bruise them) to infuse the cocktail with the mint flavor. You can do this with a muddler or just with a handle of a wooden spoon.
Add a couple of ice cubes.
Fill the glass with prosecco and soda water.
Stir gently and adjust the drink to your liking by adding more lime juice or syrup if necessary.

The History of Hugo
The Hugo cocktail was invented in South Tyrol, a northern region of Italy bordering Austria. It was created in 2005 by Roland Gruber in a bar in the region of Trentino-Alto Adige. In this region, many elderflowers bloom around May and June. Hugo comes from a family of Spritz cocktails and is a lighter, more refreshing version of the Aperol Spritz cocktail. The drink became popular very quickly and can now be found on almost every menu in Austrian, German, and Swiss bars.
