Fluffy banana omelette – 3-ingredient, super easy breakfast

This delicious fluffy banana omelette is made with only 3 ingredients and it’s ready in no time! It’s a great breakfast recipe for adults, children, and even babies – it’s naturally flour-, sugar- and gluten-free. You just need to mix a banana, oats and eggs in a blender then cook in a pan! Thanks to the banana, this omelette is naturally sweet but I also like to drizzle it with maple syrup and serve with some fruit.

Blender does not only mix the ingredients together, but it also whips the eggs, making this omelette extra soft and fluffy. This omelet is so simple and amazing and the best part is – so quick to make, that you can make it for breakfast on a workday! You could also cook it in the form of smaller pancakes.

Ingredients

You will need just 3 ingredients to make this omelette:

  • banana – best is ripe
  • oats – old-fashioned rolled oats or oat flour, you can also substitute it with regular wheat all-purpose flour
  • eggs

Additionally, you will need:

  • coconut oil to cook the omelet – I like its flavor but if you don’t have it on hand you can use butter or neutral-tasting vegetable oil
  • vanilla extract – to add some flavor
  • pinch of salt – to season the omelette

To serve: maple syrup (or honey/agave syrup) and fruit of your choice (I like pear and blueberries best!).

Step by step instructions

STEP 1: Add the banana, oats, eggs, vanilla, and salt into a small blender container.

STEP 2: Mix the ingredients until well combined, fluffy, and the oats are pulverized.

STEP 3: Heat the oil over medium-low heat in a non-stick pan. Pour in the egg-banana-oat mixture.

STEP 4: Cover the pan with a lid and cook the omelette until almost completely set, about 2-3 minutes.

STEP 5: Check with a spatula if the omelette is nicely browned at the bottom – then it is ready to flip.

STEP 6: Flip the omelette on the other side using two wide spatulas or you can flip it using a plate: place a plate on top of the omelette then flip the pan upside down, the omelette should stay on the plate.

STEP 7: If your omelette is completely set you can leave it on the plate but if it’s not quite set yet slide it off the plate to the pan to finish it.

STEP 8: Transfer the omelette to a plate, fold it in half immediately and fill it with fruit. Pour over maple syrup.
